Abstract
This thesis is a study of the non-traditional sector of Ghana with emphasis on processed and semi-processed foods. It is aimed at unraveling the economic potential of the total development of Ghana’s economy.
The work examines how entrepreneurs can add value to raw agricultural produce such as cassava ( to obtain cassava flour ‘kokonte’, cassava dough, etc.) maize ( to obtain corn flour, roasted corn, corn dough, etc.) and other varieties such as wean mix to make them more acceptable to foreign markets and make them less perishable which eventually gives them better prices than the raw agricultural produce.
